A Delicious Recipe for Creamy Chicken Casserole

I keep a list of our families favorite meals, they have a star next to them in my collection of recipes and this Creamy Chicken Casserole from Easy-Chicken-Recipes.com is one of them.

It’s a really easy meal to prepare and it all bakes together in one dish. The preparation time goes even faster when you use pre-cooked chicken from the store. I like to use a rotisserie chicken whenever possible because the meat is so moist and tasty.

Our youngest one has a fascination with mushrooms, so I add some canned mushrooms to this recipe to please him. I just wish he would stop picking them out and playing with them. The crust on this recipe is actually crushed Ritz crackers. They add a crunchy, buttery flavor to the dish.

My teenaged son keeps begging me to add cheddar cheese to this recipe. Actually, that isn’t a bad idea. I think that would be a nice addition.

Nutritious Vegetable Fritters

When I was a child, I love eating fritters but my mom won’t allow me to eat it regularly because she said that it is not that healthy. So as I grow up, I think of a way to make these fritters healthy for me and for the whole family. Here is a fritter that everyone will love. This vegan recipe is delicious and nutritious.

Make the batter by sifting the one cup of all-purpose unbleached flour, 1/4 teaspoon of baking soda, 1 ½ teaspoon of salt, and ½ teaspoon of freshly ground black pepper together in a large bowl. Then slowly add a cup of cold water to the flour mixture, beating as you do so. Heat ½ inch oil in a skillet over a medium flame. Having a well heated pan will lessen the batter to absorb too much oil. Put 2 cups of coarsely grated butternut squash, 1 cup of bean sprouts (washed, drained thoroughly, patted as dry as possible) and 3 scallion (cut into 2-in pieces and then cut lengthwise into fine strips) into the batter and mix. Remove heaping tablespoons of the fritter mixture and drop gently into the skillet. Fry for about 3 minutes on each side or until fritters are a nice medium-brown color.
